Default any suggestions on cooking Beef Shanks?

Braise them with fennel, tomatoes, celery, carrots and plenty of onions.
Use a nice red wine or a good beer as part of the braising broth... maybe
even milk.

Don't forget the garlic cloves and loads of black pepper....
