Why Macaroni Cheese?

If you regularly read this group, the answer is apparently yes. I
admit that I like it, but I rarely eat it - it seems rather fatty and
it
gives me a heavy, bloated feeling when I'm done - so I limit my-
self to a taste (maybe two) every once in a while and don't make
it at home. I used to make it often for my son, but he seems to
have moved on in his food interests.
It's fairly common but far from universal on restaurant menus.
It fits the profile of a comfort food oriented menu. Also, some
quite expensive restaurants offer upscale versions. I saw it on
a lunch menu about two weeks ago priced at around $17/18 US.
