Why Macaroni Cheese?

Daisy,
I too grew up in Southern California, but we had mac and cheese only
every once in a long while. For some reason, to me an odd reason, mac
and cheese is considered one of the ultimate comfort foods in the U.S.
So apparently most of the U.S. grew up eating it much more than I did.
I find it heavy and goopy, and don't know if I've had it since I was
eighteen years old, but most adults I know like it.
To some Black friends, it's also considered soul food. (Is soul food
capitalized?)
