The chicken and rice was pretty easy: I put rice and chicken stock into the
rice cooker but didn't turn it on. I browned chicken thighs (no additional
fat needed; they cooked in the fat which rendered from the skin), then put
them into the rice cooker. While the chicken was cooking I halved
(lengthwise) a bunch of royal trumpet mushrooms. I browned the mushrooms
cut-sided down and added them to the rice cooker along with a healthy
sprinkle of Penzey's poultry seasoning and black pepper. Sent the rice
cooker on its merry way, and when it was done I sprinkled the rice with
freshly-squeezed lemon juice.
(I would have made a salad too, but my girlfriend sidetracked me.)
