Actually, IMO, it depends on what one is going to do with the cheese later.
If it's going to be cooked in something, real cheese usually does just fine.
I've sucessfully frozen shredded cheddar, shredded mozzarella/provolone mix,
sliced swiss, and sliced pepper jack. I actually purposely freeze cream
cheese if I'm going to want it melted in something later as I think it melts
better after freezing.. However, if it's cheese you're going to eat w/out
it being cooked in something, I probably wouldn't freeze it. Back when both
my sister and I were home, mom would get the 72-slice packs of American
Cheese (not the individually wrapped slices, but the sliced kind). It
always seemed to keep just fine. Mom would pull off a small stack of
sliced, then wrap the rest up tightly in plastic wrap and foil, and then
stick it down in a large ziplock bag.
