This may be true in many places, but one can get a dish in my region
consisting of warm corn tortillas topped with fried eggs (over easy)
and a layer of chili. Typically, it is topped with a little grated
cheese and a sprinkle of diced onion. Maybe some cilantro.

People call it huevos rancheros.
