We like english muffin melts around here.
Toaast the english muffins.
Spread thinly with cream cheese - flavored if you have it (garlic &
herb or scallion or chive)
Top with thinly sliced tomatoes and red onions and some sprouts
Add a slice of cheese (muenster, colby, jack all work well) and run it
under the toaster oven broiler to melt.
Good for breakfast or lunch.
