It's a "processed cheese food product" that is a combination of
several types of cheese, packaged in five-pound bricks. It got its
name from being offered by the U.S. government to those receiving

people, it also used up surplus milk, propping up the price some.
Think of Velveeta (R) in a biiiig ol' chunk and that's government
cheese. I had it a couple of times. Artisanal cheese it ain't, but
it tastes better than you might expect of something created to
government spec. :-)
