When I make guac, I will mash up two avos, mince a couple Tbs red onion,
a small minced plum tomato, a couple squeezes of lime juice, and salt,
then mix. The last avo I medium/fine dice and add it last, folding
minimally for chunkiness aesthetics. Fridge for a few hours before
serving.
Mostly I like cool guac and don't add peppers but I'll buy pre-made spicy
on occasion.
