Cranberry Cracker Salad
Recipe By: rfc post by Barb Schaller 12-9-06
1 # bag cranberries
30 soda crackers (2" squares) coarsely crushed
1 container Cool Whip (9 oz.)
Cook the cranberries according to package directions; cool. In a bowl
(about 1-1/2 quart capacity?), preferably clear glass, layer the
ingredients in order given, in thirds, ending with Cool Whip. Cover and
refrigerate at least 4 hours or overnight.
A little tricky putting the whipped topping on top of the soda crackers
-- put on dollops of the stuff and carefully spread it together to
cover, trying not to curse when you flub up and pull the soda crackers
up.
