you may need just a pinch of salt in the water/cocoa/sugar syrup to really
bring out the chocolate flavor
I usually only use 2 oz of water when making the chocolate syrup base for
hot cocoa. Stir constantly.. the cocoa needs to cook a bit to lose "raw"
flavor. Sort of the same concept in cooking roux (flour and fat used to
thicken sauces/soups)
