I haven't gone through the whole list but I disagree with the refrigerated
bread "promotes staling" claim.
I always keep a fresh loaf of bread in the fridge and it never goes stale.
The added benefit is breads don't mold as fast.
I do freeze loaves until the fridge loaf is almost gone then add another.
