I don't know how Bob does it (and we live in the same city, so I hope I
can pick it up from him), but I once received a package of smoked salmon
that was FedEx'd overnight, with some freezer packs keeping it cool.
Barely. Paul Hinrichs (r.f.preserving friend who doesn't post any more)
knew what he was doing with his smoker! Yowsers!
