I think you might be able to freeze it, as it's happened to me on a number
of occasions by accident. The sour cream got shoved to the back of my fridge
where it froze solid. I just let it thaw near the front of the fridge and it
was fine. There was a bit of liquid at the top but you can just drain that
out.
