Yeah. Here, it's usually called "vital wheat gluten", and I buy it
from the bulk bins.

I used to do it that way, too. I didn't mind the work, as it was just
part of my hippy-commune way, but these days I'd rather do it this
way. It's still MUCH cheaper than store-bought seitan, and I like it.
