Now you've gone and done it. You wrote the "P" word, which means we'll
shortly get a discourse on the superiority of Italian wines and the
necessity to only consume them with Pugliese cuisine cooked by a
76-yr-old widow with a moustache and black shawl who is related by her
first marriage to a cardinal from Vicenza.

Of course you must not allow the wine to be aerated or "breathe" which
will ruin it. In fact, for a late-harvest Primitivo of that age, you
will probably need to drill a small hole through the cork to insert a
straw and then sip the wine slowly while holding the bottle in a brown
paper bag.
