Default substitute for butter?

D and use a lot of olive oil in our cooking. The flavor's not the
same of course, but we work around it with other things like big
herbal and spice flavors. Also, I've taken to making my own demiglace
the past couple of years. Demiglace in a sauce or another much
reduced stock will offer a rich mouth feel with considerably less fat
or even almost no fat at all.
