Tool note: A professional chef I know shares my concern about cleavers &
fingers. So, for some work, he rests the cleaver on the food (like a brick
of frozen spinach), and whacks the top of the cleaver with a wooden mallet,
available at any decent hardware store. Cleaver is happy, fingers are happy,
and you can cut more precisely.
