I have a Matfer mandoline that I bought several years ago. I confess
that I don't use it often, but when I *do* use it, it's wonderful.
Take potatoes au gratin: the slices are beautifully uniform and thin
and take no time at all to process. Need a julienned veggie? Zip,
zip, zip.Ditto waffled slices.

One word of warning: you have to really watch what you're doing. You
can slice a finger faster than you can say "Aaaauuuggghhhhh!!!" I do
not mix wine with my mandoline!
