Primary items I use are garlic, grated fresh ginger, onion (fresh or
powder), black pepper and dried celery (ground) or celery seed.
Dried ground lemon peel is also good, as are dried dill weed, basil,
tarragon and other dried herbs.
I'm not much of a salt fan either, but I will use light soy sauce and
teryaki sauce in small amounts.
