Asparagi alla Parmigiana
2.2 lbs fresh or frozen asparagus
1/2 cup butter
1/2 cup grated Parmesan cheese
Frozen asparagus does not need to be cleaned.If you are using fresh
asparagus, clean them by rasping off the dirt on the bottom of the
stalks. Rinse well and cut to the same length. Tie them together and
boil in salted water for about 20 minutes. Strain, untie, and divide
into two bunches that you will place on an oval serving dish with the
tips facing inwards towards each other.
Melt the butter in a pan and when it starts spluttering pour it over
the tips and sprinkle with abundant grated Parmesan cheese.
