Smithfield ham and grits for brunch
What shall I do with this gift of Smithfield ham, I wondered?
Served it with itty-bitty biscuits and a mess of creamy grits made with a
bit of sharp white Cheddar. True Southerners would have demanded beaten
biscuits but I think they taste like hardtack. My high 'n' fluffy ones went
over well instead.
I remember my mother doing real old Smithfield ham -- back way back --
starting with soaking it in a giant tub. Such a production!
