They are a treat, no doubt. Loin chops have always been our favorite
cut of lamb. Last time I made them exactly as you describe except
that I put a couple of sprigs in the pan when it went into the oven.
Just for the smell. They are also great on the grill, and I again use
rosemary to produce smoke and aroma.
Now and then I'll find shoulder chops and cut them up to use in a stew
with a lot of onions. Better than other cuts, I think. -aem
