The best dishes for a candlelight dinner are dishes that are prepared in advance
and will hold well. The purpose is to pay attention to your SO and not have
then standing in the kitchen watching you slave over a stove.

First determine the menu, soup or salad? Both can be prepared in advance and
just dressed and served.

As far as the main course timing is critical you want something like a Beef
Wellington which will hold for several hours or a braised dish like Osso Buco,
braised lamb shanks or a ragout.

Need a starch? got a rice cooker?

Veggies are easy, just blanch and shock in ice water. Then reheat in a burnt
butter sauce. They will be warm and crispy.

For dessert hopefully you've covered the loaf of bread , the jug of wine, and
now it's time for the THOU!
