Default Ladies' Luncheon

Yesterday I attended a luncheon held by the local church ladies. The idea
was that if you were interested in going, you put your name on a list, names
were divided up according to items needed: main course, salad, bread,
dessert, beverages. You were notified a week in advance what item you were
to bring (I had dessert). You met at the church on the morning of the
luncheon and were assigned where you were to go (you didn't know until that
point) and you met at someone's house with four others plus the hostess and
got to dine with and meet with people you probably didn't get to know very
well until then. It was nice. The dessert was one I found in the local
paper and modified it to be dietetic since I didn't know if there were any
restricted diets.


Angel Lush

1 premade (or bought) Angel Food Cake
1 can (20 oz.) crushed pineapple, in juice, not drained
1 box of instant vanilla pudding
1 8 oz. container of cool whip
Variety of fresh berries

Mix pineapple and dry pudding mix together until powder is absorbed. Add
cool whip and continue mixing until everything is blended. Set aside for
five minutes to set up.

Slice cake into three layers. Place approximately 1 1/2 cups of pineapple
mix between layers and top the cake with the remaining mix. Sprinkle with
berries and refrigerate for approximately an hour before cutting.

I substituted sugar free angel food, sugar free pudding, and fat free cool
whip (or cool whip light). The ladies liked it and it traveled well.
