I'd second that idea.
There was a recipe posted here a few weeks ago;
Takes 10 minutes to prep, and doesn't tie up the oven.

Mix; 2 lb pkg frozen home fries ( thawed )
2 c shredded cheddar
1 can cream of chicken soup
??? chopped onion
optional sour cream.

Put in a crock pot, and cook for 4 > 6 hours.
