The Best Tortellini Salad
1 lb tortellini (I use a mix of cheese, spinach, and sometimes meat filled,
all different colors of pasta)
1/4 cup pesto, jarred or homemade
5 Tbs extra virgin olive oil
1 Tbs fresh lemon juice
1 1/2 Tbs red wine vinegar
1/2 tsp salt
1/4 tsp pepper
1 cup fresh peas, or frozen, thawed
1 cup thinly sliced red onion rings
1/4 cup pine nuts
1/2 cup crumbled gorgonzola or other blue cheese
Cook tortellini in boiling salted water according to package directions.
Drain in a colander and cool under cold running water. Drain very well.
In a large bowl, combine pesto, olive oil, lemon juice, red wine vinegar,
salt and pepper. Beat with a fork to blend. Add tortellini and toss to
coat. Mix in peas.
Serve on a large platter, garnished with red onions, pine nuts and
gorgonzola.
