I was looking at creams for cheesemaking not long ago; almost ALL of the
brands I saw in various supermarkets were UHT, not just the ones in
unrefrigerated cartons. The only brand that was not ultra-pasteurized
was one sold in the organic dairy section at a Fairway supermarket.
