I often cook more food than for one person. However, I also know you can
eat the refrigerated leftovers either "as is" within a few days - up to a
week, depending - or just go ahead and freeze the leftovers the next day.
It's not rocket science. Or do I have a degree in rocket science and am not
aware of it? LOL
