We have a Waring Pro and absolutely love it.
I wonder why it wasn't in the running.

Anyway, it has an immersed heating element, so when you add the food,
the oil comes back to temp very quickly.

We've made huge amounts of food and in the end the oil level barely
dropped, which means it didn't end up in the food.

It's also very easy to clean.
