Chocolate Fudge
2 cup white (granulated) sugar
2 Tbsp Corn Syrup
3/4 cup Milk -- Scant (Not lowfat)
4 Tbsp Cocoa
1 Tbsp Butter, preferably unsalted
1 Tbsp Pure Vanilla Extract
Cook sugar, syrup and milk til it boils. Add Cocoa. Continue cooking to
240 Degrees F. (until it forms a ball in water). Let cool a minute, beat
in butter and vanilla until it creams. Pour into buttered dish. Cut into
squares when cool.
