Red Beet eggs are boiled, peeled eggs added to the pickling juice of picked
beets, sometimes with a few beets and onions left in the brine.
Eggs left this way for a few days (in the fridge of course) develop into a
lovely magenta color hence the term 'red beet eggs'. Sometimes you can find
them on a salad bar. Will eat beets, but love the eggs.
