Default What to smoke first?

First, do a burn-out/seasoning of the pit. Run the pit at about 250 to 275
for 2 to 3 hours. If there is any residual oils from the manufacturing, it
will take of it. Then I would smoke-roast a chicken. Do the chickens at
275F. This will give you a good feel for temperature control, and chicken is
cheap. Once you feel comfortable with the pit, then do pork butt.
