1. Check with the USDA and make sure that the recipe you use is safe for the
canning method you pick:

2. Check with the local and state health departments to find applicable laws
both for food production and business enterprises. Here in my end of Texas,
residential producers may not sell. Except at a registered Farmers' Market.
In New Mexico, only high acid foods (below 4.6pH) may be home produced and
sold. And that's just a beginning.
