I can hardly see the advantage of using the Extras feature over what you
are doing. The function is supposed to add at the beginning of knead
cycle 2, but that follows the initial mix cycle, which is very short and
the first knead cycle, likewise short. There's barely a difference, as
far as I can tell. My thinking is that for extras that are sensitive to
the action of the machine I could add them near the end of the 2nd knead
cycle and it would be the best option.
