Speaking of zucchini, last night I fried zucchini and eggplant. The
eggplant was small, about 5" long. I sliced the vegetables, dipped them
in a beaten egg, then in equal parts of panko crumbs and parmesan
cheese, seasoned with Tony Chachere's.
