Only one time have I seen this on the menu in a small basement-type Pioneer
Square, Seattle, French restaurant.
It was a huge cucumber, filled with some meat mixture (seemed like it was
pork) and baked. At the time I thought it was absolutely delicious and
thought that someday I'd look for a similar recipe. There are probably some
recipes for a stuffed with meat, baked cucumber somewhere in the cookbook
annals.
