Frying typically takes place at temps above 300 deg F. Water boils at
212 deg F. Water and oil do not mix. So, the little water bubbles
get instantly superheated beyond boiling by the hot oil and *POP*!...
a bursting steam bubble throws very hot oil everywhrere. IOW, keep
water away from frying oil.
