I ordered a (plain) quesadilla once and received two tortillas with cheese
in between.
I was ill and wanting some comfort food, something plain. I recall it as
being completely large and cut into 6 pieces (pizza type slices). To me, a
quesadilla can go from there; i.e., having any little addition of veggies,
chorizos, shrimp, hot sauces, anything you can think of.

The main difference between it and a taco and burrito is that a taco is
folded over, a burrito is rolled up, a quesadilla 2 tortillas are used, one
on bottom, one on top; but a quesadilla is grilled in some fashio.

Using one's imagination, if the tortilla were not too large, you could put
it in a panini grill.
