REC: Homemade Apple Butter
This is a recipe of my mom's. This stuff never killed anyone to my
knowledge, but times have changed and so have canning procedures.
Perhaps someone with canning experience will pop in and tell how to
properly process it in the 21st century. Tastes good!

Apple Butter

4 quarts apples -- sliced
1 quart water
1 quart apple cider
2 pounds brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
Wash and slice the apples, add the water and boil until soft. Press
through food mill or sieve to remove skins and cores.
Put apple pulp and brown sugar into boiling cider. Continue boiling,
stirring constantly, in a figure eight, to prevent burning.
When thick, add the spices and cook until thick enough to spread.
Seal in sterilized jars.
