Moderation. Bacon grease is the bestest, bestest grease[1] in the whole
wide world[2]. Don't be particularly moderate in your use of it. Be
particularly moderate in how often you use it.

[1] The bacon lobby hasn't kicked in with a better name for this
render-it-yourself lard.
