PaceŽ Picante Sauce makes an OK quick gazpacho base.

Add finely chopped cucumber, and maybe a fresh tomato. Chill. Thin
with cold water and/or lemon juice if it's still too thick after the
salt in the picante sauce pulls the water out of the cucumber.
