I make a couple big batches of candied ginger every year. Last year the
first batch was sliced thin and dried crispy. Different, but nice. I minced
some up and made a sort of ground candied ginger that is very nice in any
number of dishes.
Thanks for this thread, it's been an interesting discussion.
Do y'all mostly cut things up the same size (like my sister does) or are
things interestingly different in shape?
