It would make an interesting survey...

I'd be curious as to the percentage of people that have access to a
reliably good butcher shop.

Granzine's in New Braunfels has been repeatedly preached to me. They are
around 20 miles and I've not checked them yet.

I'm wondering if they do custom cutting. The one in Kyle does and they
charged a very reasonable per lb. price.

I don't have their current rates. It's been a few years. They custom
slices an emu rump for around $18.00 total. I don't remember the per lb.
rate.
