As you may already know, this topic has been discussed here from time to
time in various contexts (general safety, plastic vacuum bag toxicity,
etc., etc.).

If you're willing to spend some fairly serious money and devote kitchen
real estate to the gear, you can certainly buy commercial sous vide
equipment. Even the books on the technique have fairly eye-popping
price tags.

I've not seen any equipment advertised for household use. This is not
surprising given the relative complexity of the equipment, not to
mention the potential liability to anyone explicitly offering sous vide
equipment for use at home.

But if you're comfortable working with plumbing, pumps, electricity and
electronics, I'd guess you could adapt an existing (large) deep fryer to
function as a home sous vide cooker and have at it. Then you'd only
have to contend with the high-priced books and the potential for
botulism poisoning.
