ground beef extend its life or should it be thrown out if it is not

In my experience, 5 days is maximum if it has been treated properly in
the interim - i.e., refrigerated constantly and not reheated more than
once. I generally don't keep it longer than 3 days, because I'm
extra-sensitive to "old" ground beef.

Yes, cooking it does extend the life... hopefully you cooked it
properly. It's okay to keep the cooked product for about five days as
long as it's refrigerated properly.
