I think it was here that I saw a thread about tamarind.
I saw my wife, Jun, cutting up some kind of fruit or vegetable. When I asked her what they were, she told me they were tamarind. She told me she was going to make a hot sauce with them. I got our daughter to extract the recipe from her. Here is the first draft she e-mailed to me. Jun says she has 100 more (not necessarily tamarind)!? Jun's "nam prik ma-kaum-pookem 20 fresh tamarines 30 fresh prik keenoo 1 whole red onion 1/2 whole fresh garlic 6 whole pickle crab (pookem) 2 table spoon fish sauce 2 table spoon sugar put everything in the blender (make sure you take all the seeds from the tamarines out before you put in the blender), then put it in the big bowl. Add 2 table spoon of fish sauce and 2 table spoon of sugar...then taste it see if you like it, if not you can add the fish sauce or sugar. serve with fresh vegetables like cucumber, brocoli, cabbage etc... any question please contact Mom" -- Nick.
