Powdered This & That
 
Saw some powdered galanga and some powdered lemongrass at one of our
local markets. Anyone ever use such a thing? Did it make a
reasonable substitute for the real thing or is it a total waste of
money?

Powdered galanga'll work. 1/2 tsp = 1 slice of dried. Dried should be
available in cellophane packets and adds a nice texture.

Buy fresh lemongrass. Stick one in a pot and grow yer own. If ya have a
yard, even better!

Waste of money. I've tried each one once and neither of them had
any flavor. They could have been old, though. I've also tried
trimmed lemongrass stalks bottled in water - same result.

I bought three stalks 2 weeks ago and cut off the last 1/4" of stem
and placed them in shallow water in a glass. They['re doing nothing
but drying out far as I can tell.

We put them similarly. They sprouted fine. Texas water tastes like
turpentine!

You have to wait for the turpentine to evaporate, then drink it.
I can't even taste how bad it is any more. I wouldn't touch it when
I first got here but now I drink at least a gallon of tap-water
every day.

We only get frost a few days a year and not real cold. So far, ours have
survived. Google on Lemongrass Frost.

You should be able to get live lemongrass in any Thai/Asian market.

Powdered Lemongrass is particularly useful in a marinade for grilling meats.

Powdered galangal has no real use at all!
