I know you're not supposed to freeze coconut milk, I think it curdles, but
what about after it's been used in a recipe? If I make peanut sauce or curry with coconut milk and want to freeze the leftover portion is that okay or will it still curdle and ruin the sauce? |

Since coconut milk is a suspension, the consistency might change after freezing, but it won't "curdle". I haven't noticed any difference after cooking with previously frozen coconut milk. -- Dave |
