Might anyone have a favorite Chinese oyster sauce recipe they'd like to
share. After decades of being unable to enjoy oyster sauce sauces, I bought a bottle of vegetarian oyster sauce (have no idea how it will taste) and was hoping to put it to good use. I used to love broccoli in oyster sauce. I have no idea what ingredients to mix in with the bottled sauce. Thanks in advance. Victoria Vermont, USA |

Google and http://en.wikipedia.org/wiki/Oyster_sauce gives the answer! Vegetarian oyster sauce is not made from oysters but from mushrooms and tends to have a milder taste than the original! It isn't vegetarian at all, but contains oyster extract. The vegetarian oyster sauce is vegetarian but seems to contain little other than sugar thickener and coloring. I'm not sure about the flavor, as the one time I've used it, I mixed it with thick soy sauce and plain soy sauce and some other things. The result wasn't something I'd like to replicate. For simple use of oyster sauce at home, I like to mix noodles with a
little oyster sauce, sesame oil, and chili paste. Sometimes I prefer a lighter taste, so I would mix oyster sauce, soy sauce, sesame oil, a little sugar, fresh ground pepper and toss the noodles in this mixture. Thanks for the sauce suggestions. I shop for ingredients on North St. in Burlington. There are 2 mainly Thai groceries near North Champlain. Might you know of other sources in Vermont, or elsewhere? If you're up in Burlington, then the 2 on North St. (Vietnamese) are
the only ones. They get their supplies from Boston. The smaller of the two seems to take custom orders. There's a Japanese restaurant in Williston that has a very small selection of Japanese dry goods. I'm in the Upper Valley area now. There is an Indian dry goods store here. I will be opening up a multi-ethnic asian market in July. I will take custom orders for things available in NYC (dim sum, fresh produce, seafood, frozen foods, dry goods). My favorite is a stir fry with brocoli, tofu, any other vegeis you have around (e.g. carrots, cabbage). Stir fry onions and garlic and ginger, then add brocoli, then cubes of firm tofu and other vegetables. Optionally, add some peanuts. When everything is cooked, turn off heat and add in couple tablespoons oyster sauce and stir well and serve. Simple and delicous! Oyster sauce also tastes great with asian greens. |
